Everyone knows hot to peel potatoes, but not everyone is familiar that young potatoes, if in its the beginning stage of its maturity, can be scraped instead of peeled. After the scraped potato is prepared in either boiled or baked version it has a unique beautiful look to it. But the taste is just not describable!
I’ve searched in Google and YouTube if there are any tutorials on how to scrape any kind of young potato by hand using a knife and to my big surprise, there was not a single result found. on how to scrape any kind of young potato by hand using a knife. Every young potato season I don’t miss making this delicious dish out of the homegrown young potatoes (check out this recipe).
There is no comparison in taste ...
... to a matured potato even if it was grown in the garden. The young potatoes have a deliciously sweetish taste. Young scraped potato must be cooked or baked whole or half. It’s not the best if prepared as meshed do to many visible skins in it. Young red potatoes can also be prepared as mashed potato dish, but it has to be peeled in order to have the clean and skins free mash.
Directions:
After digging young potatoes rinse the dirt off by pouring water into the bucket and then dumping it. Repeat this steps multiple times to ensure all the dirt is rinsed off.
Then fill the bucket with clean water and the potatoes are ready for removing the skins.
My preferred way to scrape potatoes is to dump them (after rinsing potatoes outside using a hose) into the sink. Turn on a very small stream of cold water and scrape the potato. The water will be rinsing off the skins for better scraping visibly leaving the potato clean. After the potato is scraped place it into a bowl filled with clean water.
Young potatoes scrape better and cleaner if a small stream of running water pours over the potato. Of course, you can periodically dip the potato into the bucket with water to remove partially scraped skins like it shown in the video below.
Scraped potatoes must be covered with cold water to prolong its freshness and bright color. If the potatoes are not covered in the water, it will brown and loses its crispiness. Also, it can be stored in the fridge completely covered in water for up to 24 hours if not ready for use.
