This Vegan & Gluten-Free Chocolate Coconut Bites (Video) recipe is amazingly easy to make and super handy to have on the go. Toss a few ingredients together and in no time, you’ll have an absolutely delicious dessert or a snack that will give you a boost when needed and satisfy your chocolate cravings all at once, no doubt!

These chocolate bites are naturally sweetened, loaded with nuts and enriched with natural cacao. They are simple, so delicious and healthful, which makes it a wonderful guilt-free five-minute dessert or a snack at any time of the day year-round!
Why go hungry when you can throw a few of these treats in a baggie for your purse or backpack to tide you over until the next meal? I prefer these tasty little spheres firm and cold, so I store them in the fridge.
They truly taste amazing for being so easy! They’re comparable to chocolate truffles you may have tried but made with much cleaner ingredients for conscience-light enjoyment.
Vegan & Gluten-Free Chocolate Coconut Bites Ingredients
- Dates
- Walnuts
- Cashews
- Almonds
- Salt
- Vanilla
- Cacao powder (or cocoa powder)
- Coconut oil
- Coconut flakes
Vegan & Gluten-Free Chocolate Coconut Bites Simple Steps
Add dates, walnuts, almonds, and cashew (all organic nuts) into a food processor and process until all is well blended. Turn off the processor. Using a silicone or wooden spatula (best option), scrape down the mixture from the sides of the food processor and pulse it again. Pause and clean the sides of the processor as needed.
Then add sea salt, pure vanilla extract and process well for another minute or so.
Next, add organic unsweetened coconut flakes, and organic cacao powder (not pictured). Process again until all combined. With the food processor running, add melted coconut oil and blend until all are well combined.
Using an ice cream scoop (tablespoon in size), scoop out a heap of the mixture, squeeze it in your hands and then shape into a ball.
Finally, coat it with coconut flakes. Place the finished bites onto a plate and refrigerate for 30 minutes to firm up before transferring them in a storage container. And close it with a lid.
Store in the fridge for up to a week, if you're lucky enough for them to last that long. Enjoy with a cup of tea or coffee as a dessert or a snack!

- ½ cup – organic toasted almonds

- ¼ tsp. – sea salt
